Few recipe alterations that worked for me:
+ used a whole cauliflower, which was more than the recipe asked for
+ used sweet potatoes instead of carrots
+ used pistachios instead of almonds
+ used two fried onions instead of one for the top which I fried in sunflower oil and not in ghee
+ When layering the cooked vegetables and rice at the end, I simplified life and just had all the vegetables together at the bottom and piled all the rice on top
